A staple on many dinner plates, potatoes are downright amazing for all sorts of reasons. For one thing, they are usually delicious any way you cook them - baked, fried, boiled or what have you. Secondly, they’re usually pretty cheap to buy and in the present state of the economy, that’s something we can all cherish. So, do you remember when I asked for all of your potato dishes? Well the time has come for Chew on That to host the October Potato Ho Roundup (a blog event created by Cathy of Noble Pig and Krysta of Evil Chef Mom) and here they all are…

Here at Chew on That, we love potatoes. We might not always show it but our love for potatoes and all they have to offer is certainly abundant. Potatoes are a vegetable with versatility, how could we not love them? You can boil them, fry them, bake them or grill them. You can slice them, dice them, mash them, or even make them into pasta (gnocchi).
On October 15th, we will have the honor of guest hosting one of our favorite blog events called: Potato Hos Unite. Created by the lovable food bloggers Noble Pig and Evil Chef Mom, this blog event brings all of us potato fans together to share our favorite potato dishes. It happens on the third Wednesday of every month, something the creators like to call “Potato Ho Down Wednesday”.
So, come one come all to what will be a very delicious potato roundup. And don’t forget to RSVP with your potato dish by October 14th! See full directions after the jump.

Pictured above may not be what you think it is. Actually, I’m curious what you think this is, but since this blog doesn’t qualify for an immediate interaction, I will just have to tell you.
It’s vanilla ice cream covered in cocoa powder in a pool of hot fudge topped with whipped cream, otherwise known as the “Rocky Mountain Potato.” Looks like a baked potato covered in sour cream doesn’t it? Ok, maybe the whipped cream is a little too transparent, but if it weren’t for that I’d think RAM was dead on with the potato.
What are the best foods inspired by foods you’ve seen? Have pictures? Send them my way!
-Hillary, excited for the weekend!
